"DU" Want to Have Fun Cocktail

Keeps You Laughing All Night Long

Cheers to one of my favorite fraternities who "allowed" me to make a special drink each year for Mom's weekend. I hope you have as much fun with this cocktail as we all did! Careful ~ they go down easy, so if you add alcohol, they can sting in the morning.

Ingredients:

  • 1 bunch organic mint leaves stripped from stems

  • 3 cups pomegranate juice

  • 3 cups organic coconut water (can sub. sparkling mineral water)

  • 2 cups of organic fresh squeezed lime juice

  • (optional) 3 cups of vodka - I use either Ciroc or Tito's because they are Gluten Free.

  • (optional) Fresh pomegranate seeds for pitcher and each glass 

  • Fresh Lime wedges for each individual glass

  • Mint sprig for each glass

Note: Always presume all ingredients listed are organic and/or as natural as can be (GMO and pesticide free).

Note: It's easy to get confused when reading food labels today. To save you research time and frustration, I have linked as often as possible to my favorite brands. Kitchen Tools:

Directions:

  1. Place mint leaves in the bottom of a tall glass pitcher.

  2. Use a long wooden spoon and muddle the leaves into the bottom of the pitcher to release the mint oils.

  3. Add a few lime wedges and smash into the bottom also.

  4. Pour all the liquid ingredients into the pitcher and stir until mixed thoroughly.

  5. If you have pomegranate seeds, stir those in as well.

  6. Place the pitcher top on (a pitcher with a top that strains keeps you from eating lots of "salad" with your drink! haha) and place into the refrigerator to chill. If you want to serve right away, place a few ice cubes into the pitcher so it chills but doesn't dilute.

  7. When serving, fill each tall glass with ice cubes, a few pomegranate seeds, and drink mix.

  8. Top with a fresh lime wedge and a mint sprig. Enjoy this cool refreshing cocktail! It's perfect for a warm summer evening.
